Burgundy Beef Po' Boys with Dipping Sauce Ingredients:1 boneless beef chuck or bottom round roast (3 lbs.)2 cups chopped onions1/4 cup dry red wine3 tbsp. balsamic vinegar1 tbsp. beef bouillon granules1 tbsp. Worcestershire sauce3/4 tsp. dried thyme1/2 tsp. garlic powderItalian rolls, warmed and splitDirections:1. trim excess fat from beef. Place onions on bottom of crock-pot. Top with beef and remaining ingredients, except rolls.Cover; cook on high 8-10 or until beef is very tender.2. Remove beef from crock-pot; cool slightly. Trim excess fat and discard. Shred with 2 forks. Let cooking liquid stand 5 minutes to allow fat to rise. Skim of fat and discard. Spoon beef into rolls. Serve cooking liquid as dipping sauce.
Spicy Italian Beef Sandwich
Ingredients:1 boneless beef chuck roast(3-4 lbs.)1 jar (12 oz) pepperoncini1 - 14 1/2 oz can beef broth1 bottle of beer 1 onion, mincedIng2 tbsp. dried Italian seasoning1 loaf French bread, cut into thick slicesprovolone cheeseDirections:Trim fat from beef. Cut beef, if necessary, to fit in crock-pot, leaving beef in as many large pieces as possible.,Drain pepperoncini; pull off stem ends and discard. Add pepperoncini, broth, beer, onion, and Italian seasoning. Do not stir. Cover and cook on low, 8-10 hours.Remove beef, shred with 2 forks. Return to cooking liquid. Mix well. Serve on French bread, topped with cheese. Add additional sauce and pepperoncini, if desired.
Grilled Pizza Sandwiches(picture and recipe from

* 14 slices Italian bread
* 7 slices part-skim mozzarella cheese
* 7 slices provolone cheese
* 7 slices tomato
* 4 teaspoons fresh grated Parmesan cheese
* garlic powder
* sandwich sliced pepperoni or canadian bacon (or both if you like)
* soft butter
* Pizza sauce, warmed
Butter 7 slices of bread, lay them out on a large griddle, layer one slice of mozzarella cheese, one slice of tomato, a dash of salt and pepper, the meat or meats, a slice of provolone cheese and top the remaining 7 slices of buttered bread. Lightly sprinkle with garlic powder on both sides while toasting until golden brown and the cheese is melted. (about 3 - 4 minutes on each side) Serve with warmed pizza sauce for dipping.
